Position Summary:
Prepare and direct preparation of pastry and baked goods served using established production procedures and systems.
Duties and Responsibilities: 
  1. Prepares breads, rolls, muffins, cookies, pies, cakes, doughnuts, biscuits and other pastries, including icings and frostings, according to established recipes.
  2. Reviews production schedules to determine variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities.
  3. Follow established cleaning and sanitizing practices as outlined, including using proper safety equipment when handling ready-to-eat foods.
  4. Receives ingredients and other supplies from main kitchen and/or pantry as required for daily operations.
  5. Cuts and weighs dough into uniform portions with knife or divider, molds dough into loaves or other shapes, and places in pans; proofs dough and bakes in oven using peel; inspects product for quality during and after baking and makes adjustments to processes as required.
  6. Cleans and maintains work areas, utensils and equipment.
  7. Detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment and/or other unusual conditions.
  8. Completes production sheets and other records as required.
  9. Performs other job-related duties as assigned.
 
Knowledge and Abilities: 
  1. Ability to use kitchen equipment (i.e. oven, stove, mixing/blending machines, dishwasher, slicer, mixer, etc.)
  2. Ability to work independently and have a high level of urgency in their work.
  3. Ability to follow established food production programs and procedures.
  4. Knowledge of food production techniques and tools to produce food, decorate cakes.
  5. Ability to work flexible hours in order to meet business needs.
  6. Ability to frequently move and/or lift 10 pounds and occasionally move and/or lift objects more than 25 pounds.
Qualifications:
  1. Must be 18 years of age or older.
  2. Must possess a valid Food Handlers’ card.
  3. 2-5 years of previous work experience as a pastry baker, preferably in grocery store environment.
  4. Good oral communications skills.
  5. Customer service experience.
  6. Preference given to Hualapai Tribal Members.
 
Working Conditions:
Must be able to routinely walk, stand, bend and carry items weighing up to 25 lbs. must be able to work near high temperature areas in bakery. Must be able to work varying schedules, weekends and holidays.
