Position Summary:
Cooks are responsible for preparing breakfast, lunch and dinner at the Lodge, cooking to order for casual dining. Responsible for cooking food in a safe and healthy manner, using proper food handling and sanitation procedures and quantity and quality control in food production. Performs routine daily cleaning, maintains and operates equipment properly and follows FIFO rotation of products.
Knowledge and Abilities:
- Experience in preparing food while observing sound health and sanitation practices.
- Ability to communicate well and interact with guests and staff in a clear concise manner.
- Ability to provide outstanding customer service by providing prompt, courteous and accurate service.
- Ability to load and unload delivery trucks and handle inventory of items required.
- Ability to do prep work, sauté, broil, pan and deep fry during food preparation.
- Ability to work in a team environment, multi-task efficiently and maintain positive working relationships.
- Ability to perform tasks such as washing dishes, sweeping, collecting trash, busing tables, mopping of floors and organizing walk-ins and storage areas.
Duties & Responsibilities:
- Prepare meals and food items, while observing sound health and sanitation practices such as proper hand washing, avoiding cross contamination, monitoring food temperatures and proper sanitation of utensils and cooking surfaces. Complete temperature or stock logs.
- Responsible for quantity and quality of food served in restaurant.
- Maintain and operate kitchen equipment properly.
- Organize walk-ins and storage areas, monitoring stock levels of food items.
- Wash dishes, sweep floor, bus tables, handle trash collection and mop floors as assigned throughout shift.
- Load and unload delivery trucks and handle inventory using FIFO rotation method. Ensure kitchen is clean and stocked at all times.
- Perform other work-related duties as assigned.
- Qualifications:
- Good oral communication skills.
- High School Diploma or GED.
- Ability to lift up to 50 pounds.
- Prior cooking and serving experience working in fast food or a restaurant preferred.
- Current Food Handler’s card.
- Preference given to Hualapai Tribal members.
Working Conditions:
Kitchen environment with exposure to heat. Must be able to work extended periods while standing. Must be able to lift 50 lbs. Must be able to work varying schedules, weekends and holidays.
