Position Summary:

Prep Cooks are responsible for the daily preparation of food items used in the kitchen. Assists cooks in preparing breakfast, lunch and dinner at the Lodge. May be assigned to cook pizza and fry bread. Responsible for prepping and cooking food in a safe and healthy manner, using proper food handling and sanitation procedures and quantity and quality control in food production. Performs routine daily cleaning, maintains and operates equipment properly and follows FIFO rotation of products.

 

Knowledge and Abilities:

  1. Ability to understand basic prep and cooking procedures, such as sauté, broil, pan and deep fry while observing sound health and sanitation practices.
  2. Ability to communicate well and interact with guests and staff in a clear concise manner.
  3. Ability to provide outstanding customer service by providing prompt, courteous and accurate service.
  4. Ability to load and unload delivery trucks and handle inventory of items required.
  5. Ability to work in a team environment, multi-task efficiently and maintain positive working relationships.
  6. Ability to perform tasks such as washing dishes, sweeping, collecting trash, busing tables, mopping of floors and organizing walk-ins and storage areas.
 

Duties & Responsibilities:

  1. Responsible for daily preparation of food items to be used in the kitchen. Assist cooks in preparing meals and food items like pizza, fry bread, soups and salads, while observing sound health and sanitation practices such as proper hand washing, avoiding cross contamination, monitoring food temperatures and proper sanitation of utensils and cooking surfaces. Complete temperature or stock logs.
  2. Maintain and operate kitchen equipment properly.
  3. Organize walk-ins and storage areas, monitoring stock levels of food items.
  4. Wash dishes, sweep floor, bus tables, handle trash collection and mop floors as assigned throughout shift.
  5. Load and unload delivery trucks and handle inventory using FIFO rotation method. Ensure kitchen is clean and stocked at all times.
  6. Perform other work-related duties as assigned.Qualifications:

  8. Good oral communication skills.
  9. High School Diploma or GED.
  10. Ability to lift up to 50 pounds.
  11. Prior cooking or serving experience working in fast food or a restaurant preferred.
  12. Current Food Handlers’ card.      
  13. Preference given to Hualapai Tribal members.Working Conditions:
  14. Kitchen environment with exposure to heat. Must be able to work extended periods while standing. Must be able to lift 50 lbs. Must be able to work varying schedules, weekends and holidays.
